Elizabeth’s Invented Artichoke-Lemon-Roasted Red Pepper Stuff

I invented this stuff as a filling for baked stuffed pasta shells, but I can imagine a lot of other yummy uses for it…sandwich filling, pasta sauce, quiche or omlettes, or a filling for baked stuffed peppers. Also good with fresh basil.

3 cans artichoke hearts
1 jar roasted red peppers
3/4 C soft goat cheese
2 T freshly-grated lemon zest
Salt and pepper to taste

Blend the artichoke hearts and roasted red peppers in the food processor until coarsely combined. Mix in goat cheese and lemon zest and salt and pepper to taste. That’s it!
